Blood orange mandarin posset 8oz heavy whipping cream 3 tbsp sugar 6 tbsp fresh orange juice (i used a mix of mandarins and blood oranges) Zest from 1 orange 2-3 tbsp of sugar for torching 2 oranges -Slice both oranges in half. Using a knife, run along the edges of the orange peel. Then using a spoon, carve out the flesh of the oranges, and you’ll have 4 empty shells. Place those on a plate. -Press the flesh from the oranges through a mesh strainer. Collect 6 tbsp of the juice, place in a bowl, set to the side. -Add cream to a medium saucepan. Cook over medium heat, stir constantly. Bring to a boil and let the mix boil for 1 minute. Dont walk away, the mix could boil over! Remove from heat. Once it has cooled for 1-2 minutes. Pour the orange juice, sugar and zest into the cream. Return to heat and cook mixture on a low simmer for about 2 minutes. Remove from heat. Let the mixture cool down for about 10 minutes. -Pour into orange shells (or ramekins work) -Chill in fridge for at least 2 hours or overnight preferred!
