@mannandcobakeshop: My favourite bite of the entire trip. This hojicha warabi mochi ice cream from 21niice was everything I hoped it would be. Hojicha is a roasted green tea, so instead of the grassy notes you get from matcha, it has a warm, nutty, almost caramel-like flavour that works beautifully in desserts. Every bite had something different, the smooth hojicha ice cream, chewy warabi mochi, rich hojicha sauce, and crispy cornflake crunch all came together perfectly. As a pastry chef, I love desserts that play with texture just as much as flavour, and this one absolutely nailed both. If I could go back to Japan for one dessert… this might be it. #21niice #japan #japanfood #tokyo
