Ingredients for the dough
2 eggs
2 glasses of milk
1 glass of water
1/2 glass of sunflower oil
3 tablespoons granulated sugar
1 teaspoon salt
7 g instant yeast
I had sifted 1 kg of flour; I had some flour left over, which I showed in the video.
First proofing
1 hour

5 tablespoons milk
1 tablespoon sunflower oil
2 teaspoons grape molasses

The milk jam (dulce de leche-style milk jam) that I made 2 days ago.
Preparation
Put the milk, water, sugar, and yeast into a small pan. Stir and heat it until it is a little warmer than lukewarm, then pour it into the mixing bowl. Add some flour, salt, and the eggs, and mix.
Add the flour little by little while mixing, then add the sunflower oil and knead the dough well. I had sifted 1 kg of flour, but I did not use the flour that I showed in the video. The dough being sticky is what makes the buns nice and fluffy.
After kneading, cover the dough with a lid and place a thin cloth over it, then put it in the sun. The weather was 38°C, so it proofed very quickly.
Take the proofed dough, fold it a little to release the air, lightly oil the countertop, and make 20 dough balls. Shape them into the twisted shape I showed in the video and arrange them on a baking tray lined with parchment paper.
Cover them with plastic and set a timer. Let them rest for 1 hour.
When there were 15 minutes left of the second proofing on the tray, I set the oven to 250°C, top and bottom heat, without the fan, so that it could preheat.
Once the dough had finished its second proofing, remove the plastic covering. Brush the milk mixture over the tops and pour the remaining mixture over them.
Place them in the preheated oven and bake until the tops and bottoms are beautifully golden brown.
After taking them out of the oven, I waited 5 minutes and then transferred them onto a wire rack. I brushed sunflower oil over them. After 10 minutes, I removed the parchment paper underneath. As you can see in the video, they were still warm at that point.
