They’re actually filled with strawberry jam tho 🍓👀 Adapted these from my piped butter cookie recipe so they’re not overly sweet, while still having that super buttery, melt in your mouth texture. plus they hold their shape beautifully without any chilling time needed! makes 22 cookies 160 g unsalted butter, softened 70 g icing sugar (powdered sugar) 1 large egg, lightly beaten 30 g cornstarch 240g cake flour ½ tsp salt 1/2 tsp vanilla paste strawberry jam, strained matcha powder white chocolate melts 1. Preheat oven to 170°C. Mix the butter, sugar, salt and vanilla until combined - about 30 seconds with a hand-held mixer. 2. Add the cornstarch and mix until smooth. Add the egg little by little, mixing after each addition. 3. Fold in the flour until a smooth dough forms. 4. Scoop onto a lined baking sheet, about 25g per cookie, spacing them apart. 5. Roll into balls, then flatten with a mug or an empty jam jar. 6. Use your fingertips, or a small rounded tool, to press an oval shape into the dough. For the cherry tomatoes, use chopsticks to poke small holes. 7. Fill each cavity with strained strawberry jam. 8. Bake at 170°C for 15–18 minutes, or until just turning golden. The jam will set as it cools. 9. For the stems, mix melted white chocolate w/ sifted matcha powder until you reach your desired shade of green, then pipe little stems onto the cooled cookies. #Summer #baking #Recipe #cookies
