@usa.city3: Team unripe plantain chips, say hey Ingredients • Unripe plantains • Oil, for frying • A pinch of salt Instructions 1. Peel the plantains. 2. Heat the oil until hot but not smoking. 3. Using a mandoline, carefully slice the plantains directly into the oil, moving the mandoline around so the slices don't pile on top of each other. 4. Fry in batches, turning every 2 to 3 minutes so they brown evenly. 5. Fry for about 8 to 12 minutes, or until golden and the sizzling has noticeably reduced. 6. Drain, add a tiny pinch of salt if you like, then let them cool completely. They'll get even crispier as they cool. #plantainchips
