BETTER THAN BOUGHT EPISODE 3 | M&S Gingerbread Cookies I’m really bringing back a classic here because yes, these are better than shop bought😍 i know its not christmas yet but now is the perfect time to get those ginger & cinnamon spices going✨ perfect to serve these with a big cuppa tea, even better warmed in the microwave Ingredients 125g softened unsalted butter 100g light brown sugar 120g caster sugar 3 egg yolks 1 tsp vanilla extract 1 tsp black treacle ½ tsp baking soda ½ tsp baking powder ½ tsp salt 25g cornflour 240g plain flour x2 tsp ground ginger x1 tsp ground cinnamon 75g fudge pieces 150g white chocolate Method 1. Add the softened butter to a large bowl. Microwave for 20 seconds if needed. Add both sugars and mix. 2. Add the egg yolks, vanilla extract and black treacle. Mix until just combined. 3. Add the baking powder, baking soda, salt, plain flour, cornflour, ginger and cinnamon. Mix. 4. Add the fudge and white chocolate pieces and mix. 5. Once completely combined, split into 10 separate cookies. For accuracy, weigh the whole mixture and divide by 10 to work out how much each cookie should weigh. 6. Freeze for 1 hour. 7. Preheat the oven to 160°C fan. 8. Bake for 15-17 minutes on the middle shelf. 9. Once out of the oven, shape the cookies if needed and leave to set for 30 minutes before eating. #homemade #gingerbread #cookies
