![Full Recipe↓ Day 4/100 | POTATO SALAD 🛒 INGREDIENTS: - Potatoes: 280g - Onion: 50g - Baby cucumber: 30g - Carrot: 30g - Bacon: 1 slice [Seasoning] - Mayonnaise: 3 1/2 tbsp - Dijon mustard: 1tsp - Pinch of salt and black pepper 🧑🍳 METHOD: 1. Boil whole potatoes with skin until a skewer passes through easily, then peel and mash while hot. 2. Thinly slice the onion and cut the carrot into half-moons. Microwave them at 600W for about 90 seconds. 3. Slice the baby cucumbers into rounds (2-3mm thick). 4. Sauté the bacon and cut it into bite-sized pieces. 5. Mix cooled potatoes with vegetables, bacon, mayonnaise and mustard. 6. Season with salt and pepper to taste. 💡 KEY POINTS: - Use baby cucumbers, not normal ones. They are much closer to traditional Japanese cucumbers. - Some people say you must use Kewpie mayo for authentic Japanese food, but I’d say it’s just a 'nice to have'—not the core of the flavour. I often used non-brand mayo even when I lived in Japan. 👉 Just use standard supermarket mayonnaise.
