for anyone wondering. it's the gelatin that keeps ice crystals from forming. you can absolutely make delicious fruit ones using jello flavors and then augmenting them. I make one that uses orange juice, orange flavored Jell-O, crushed pineapple, and evaporated milk.

For anybody out there thinking ”Well what if I put it in an icecream maker bc it’s quicker ” don’t 🙃 my curiosity got the best of me, the end results was weirdly grainy. Looks like the fat in the cream froze too quickly.
