@adampotashapproach: 🍋 Dijon Lemon Salmon with Sautéed Spinach For 2 servings: • 2 salmon fillets • 5–6 cups fresh spinach • 2 cloves garlic, minced • 1 tbsp olive oil • Salt + black pepper Lemon Dijon Sauce • 1½ tbsp Dijon mustard • Juice of ½ lemon • 1 tsp honey • 1 tbsp olive oil • 1 small garlic clove, grated • 1–2 tbsp water • Salt + pepper Make it: 1. Cook the salmon: Season with salt and pepper. Heat a skillet with a little olive oil over medium-high. Cook salmon 4–5 minutes skin-side down, flip, then another 2–4 minutes until done to your liking. Remove. 2. Sauté the spinach: In the same pan, add garlic and spinach. Season lightly with salt and pepper and sauté 1–2 minutes until just wilted. 3. Make the sauce: Lower the heat. Whisk Dijon, lemon juice, honey, olive oil, garlic and a splash of water. Pour it into the pan for 30–60 seconds, just until warm and slightly thickened. 4. Plate: Big pile of garlicky spinach → salmon on top → spoon that warm lemon-Dijon sauce all over it.
