@kia_urbangardener: 🍋 Small Batch Homegrown Lemon Marmalade Makes: 3–4 small jars Ingredients * 6 homegrown lemons * 1.2 L water * 700 g white sugar (or 600–650 g if you prefer it less sweet) * Optional: 1 tsp vanilla bean paste or a sprig of rosemary for a twist Method 1. Wash the lemons well. 2. Slice them as thinly as possible, removing any seeds (keep the seeds—they contain natural pectin). 3. Place the seeds into a small piece of muslin or a tea infuser. 4. Add the sliced lemons, water and the bag of seeds to a large saucepan. 5. Bring to a gentle boil, then reduce to a simmer for about 1½–2 hours, until the peel is very soft. 6. Remove the seed bag. 7. Stir in the sugar until dissolved. 8. Increase the heat and boil rapidly for 15–25 minutes, stirring occasionally. 9. To test if it’s ready, place a small spoonful on a chilled plate. Leave for 30 seconds, then push it with your finger. If it wrinkles, it’s ready. 10. Pour into sterilised jars while hot and seal immediately.
