Mani Pittu Ingredients * String hopper flour * Salt * Water (cold or hot, according to the packet instructions) * Coconut milk Method Place the string hopper flour in a large mixing bowl. Add the salt and mix well. Gradually add the water, following the packet instructions, and mix until a soft dough forms. The dough should have the consistency of children’s play dough—soft, smooth, and easy to handle without being sticky. Lightly dust a plate with a little of the same flour. Attach the larger-hole disc to the string hopper press instead of the regular fine string hopper disc. Fill the press with the dough, then press it onto the floured plate in a circular motion to create thick strands. Lightly dust the strands with a little more flour, then transfer them to a colander or sieve. Gently shake to remove the excess flour. As you sift, the strands will naturally break into small, bite-sized pieces. Loosely fill the metal tube of the pittu steamer with the prepared mani pittu. Do not pack it too tightly. Place the tube onto the steamer, ensuring there is enough water in the base. Steam for 3–5 minutes, or until steam begins to escape from the top. Carefully remove the tube from the steamer and drizzle 2–3 tablespoons of coconut milk over the cooked mani pittu. Allow it to rest for 1 minute. Using the back of a wooden spoon, gently push the mani pittu out of the tube. Repeat the process until all the dough has been steamed. Serve warm with coconut milk, kiri hodi, curry, or your favourite accompaniments.
