Bile is one of the most underrated fluids in the human body. . People think stomach acid does all the work when it comes to digesting food, but in order to properly digest fats, bile is absolutely essential. . Digesting fats is problematic because the body is a hydrophilic (water-based) environment and fats are hydrophobic (don’t mix with water). Because of this, when fats are traveling through the digestive system, they tend to aggregate into larger droplets. Lipase (the enzyme that digests fat), which is produced by the pancreas and released into the duodenum, can't efficiently digest large fat droplets because it can only access the fat on their surface. This is where bile comes into play! Bile acts as an emulsifier. In other words, bile separates large fat droplets into much smaller droplets, increasing the surface area available for pancreatic lipase to digest. . Bile is produced by the liver and stored and concentrated in the gallbladder. Once fats reach the duodenum, the gallbladder releases a large, concentrated amount of bile into the small intestine at the same time pancreatic lipase is released so that fats can be emulsified and properly digested. . People who have had their gallbladder removed still produce bile, but they can no longer store and concentrate it. Instead, bile slowly goes into the small intestine. Because of this, people who no longer have gallbladder have problems digesting high fat meals. . By the way, bile is composed mainly of water and bile salts (the main emulsifying agents of bile. This is why I used bile salts in the video), but it also contains other compounds such as bilirubin (it gives bile its yellowish color), cholesterol, phospholipids, electrolytes, mucus, and even some waste products. .
