yeah but growing up around street food like that means your body is attuned to it and you dont get the shits over it, whereas my American ass that has never been exposed to that level of street food will be exploding if I eat it.

I’ve never had bad authentic Mexican food, or gotten sick from it. We get food trucks at work everyday and I legit only go to the Mexican ones.

I’ve been to several little tiny Mexican restaurants with smoke stained ceilings, hodgepodge miss matched tables and chairs, and last years calendar with a busty Latin chick on it that have been the best. I was in Kentucky and found a real Mexican market with a tiny kitchen in the back with a couple little tables and a little window to pass the dishes through and saw a fat little Mexican mom cooking, I knew it was going to be great!

There’s a little cart down the street from my place in Mexico that sells the best ceviche, and fish/shrimp tacos I’ve ever had. Guys been there forever. Always a line up.

I’m a food safety professional and I’ll always say it doesn’t even matter if it’s room temperature as long as it’s clean and fresh and they sell through it fast. He had the right perspective. It’s not about following the same protocols. It’s about knowing your craft.
