Leave the Skin on and smoke at 250-275, it’ll crisp up! At 225, it’s not hot enough to render the fat away and you’ll have a Rubbery Skjn! We like the Skin on, but I’m gonna try removing it and using your method! My wife has Alphagal and I smoke a lot of Turkey for her!

I just smoke on 275 til about 155-158 at the thickest internal. Pull and wrap with butter immediately. It will finish cooking while resting for 30-40 mins. That way you don’t have to worry about overcooking. It will be pull apart and juicy as hell every time. Also, i use mayo as a binder instead of mustard. It helps lock moisture in
