We have a poorly baby at the moment with a sore throat and stuffy nose, so I wanted to make him something that was warming, nourishing and easy to eat 🤒  We’re also fast approaching the cold & flu season, so make sure to save this recipe to have at hand incase of poorly little ones ❤️ Ingredients: - 1x chicken thigh (or breast if preferred) - 1 small carrot - 1 small potato - 1 small leek - 1/2 white onion - 1/2 head of broccoli - 1 tsp oregano & thyme - 2 1/2 cups water Method: 1. (Optional) bake chicken in air-fryer for 10 minutes at 180 degrees to add colour and flavour. 2. Wash, peel & chop vegetables. 3. Add oil to saucepan, add in onion & leek and cook down for around 5 minutes until softened. 4. Add in chicken, carrot and potato to the pan with herbs and 2 1/2 cups of water (ensuring veg and chicken is covered). 5. Bring to the boil, then cover and reduce heat to a gentle simmer for 30 minutes. 6. Add in the broccoli and simmer for a further 15 minutes, until all the vegetables are soft and the chicken is cooked through. (Make sure to check water levels and add more as needed). 7. Remove the chicken and shred from the bone. 8. Strain the vegetable to seperate from the liquid and keep liquid to one side. 9. Add the vegetables and chicken into blender with a little of the liquid and blend until smooth. 10. Return blended vegetables and remaining liquid back to the pan and mix thoroughly. 11.
