Creamy Tuscan salmon with mashed potatoes 😮‍💨 For 2 servings of Tuscan salmon: Salmon steaks – 2 pieces Salt – 1 tsp Black pepper – 1 tsp Olive oil – 1 tbsp Butter – ½ tbsp Garlic – 1 clove Cherry tomatoes – 150 g Sun-dried tomatoes – 50 g Fresh spinach – 2 handfuls Heavy cream – 150 ml Parmesan – 40 g Fresh basil – a handful Instructions: 1. Season the salmon steaks with salt and black pepper. Heat the olive oil in a frying pan and cook the salmon for 5-6 minutes on each side, until golden and cooked through. Remove from the pan and set aside. 2. Add the butter to the same pan. Add the grated garlic and sauté for about 30 seconds. 3. Add the halved cherry tomatoes and chopped sun-dried tomatoes. Cook for 2-3 minutes. 4. Add the fresh spinach and cook until wilted. 5. Pour in the heavy cream, season with salt and black pepper, and let it simmer gently for 2-3 minutes. 6. Add the grated Parmesan and fresh basil. Stir until the Parmesan melts and the sauce becomes creamy. 7. Return the salmon to the pan and spoon the creamy sauce over it.
