Crispy Parmesan Ranch Smash Potato Bites Crispy edges, fluffy centers, and the kind of snack you can’t stop eating. Ingredients • 1½ lbs tiny potatoes (about 1 inch; leave whole) • 1 tablespoon kosher salt (for boiling water) • 1½ tablespoons olive oil • ¼ to 1 teaspoon black pepper • 1–1½ teaspoons ranch seasoning (to taste) • ¼–½ cup finely grated parmesan Optional finish • 1 teaspoon melted butter (light drizzle) • chopped green onion or parsley • ranch dressing for dipping Step 1: Boil the potatoes 1. Place potatoes in a pot and cover with cold water by 1 inch. 2. Add 1 tablespoon kosher salt. 3. Bring to a boil, then reduce to a gentle boil. 4. Cook 8–10 minutes, until fork tender but not falling apart. Drain and spread on a baking sheet. Let steam dry 5 minutes. Step 2: Smash Using a glass or spatula, gently press each potato to about ½ inch thick. Do not flatten too thin. Step 3: Season for crisping Drizzle potatoes with olive oil and turn to coat. Sprinkle with black pepper and a small pinch of salt if desired. Make sure potatoes are spaced apart. Step 4: Roast Roast at 425°F for 20 minutes. Flip, then roast another 5–8 minutes until deeply golden and crispy on the edges. Step 5: Finish While hot, sprinkle with: • ranch seasoning • parmesan Toss gently.
