@keshmirij_: My version of making a a fish biryani.There’s something about a good fish biryani that just tastes like home. The secret isn’t only in the layers — it starts with the fish. A good marinade makes all the difference: fresh lemon, ginger and garlic, warming spices and just enough time for those flavours to really settle into the fish. Then comes the fragrant masala, perfectly cooked rice and those beautiful layers that come together to create something deeply comforting. The result? Tender, flavourful fish, aromatic rice and that unmistakable biryani warmth in every bite. Fish biryani ——————— Ingredients Carpenter fish (or a fish of your choice ) 1 onion sliced Curry leaves Cinnamon sticks Green chilli 1 tsp ginger garlic Chopped mint (plus extra for garnish) Chopped coriander (plus extra for garnish) 3 tomatoes liquidised 1 tsp mustard and jeera seeds 1 tsp each tumeric,garam masala,dhania jeera powder 2 tsp mixed curry powder 2 tsp roasted pakco masala 1 tbsp tamarind soaked in warm water 1 tsp sugar For the fried fish Marinate fish with 1 tsp tumeric 1 tsp garam masala 1 tsp dhania jeera powder 2-3 tsp mixed curry powder 1 tsp oil 1 tsp ginger garlic Salt Squeeze of lemon juice Rice - soak basmati rice for 30 mins. - Boil with whole spices (anistar,cinnamon stick, black and green cardamom,bay leaf) Method 1. Marinate fish and set aside 2. Heat oil in a pan ,shallow fry fish on both sides for 6-8 mins (medium high heat - depending on thickness of fish ) 3. Remove and drain on a paper towel 4. In another pot ,using the oil you fried the fish in ,add it in,followed by onions,chillies,mustard ,jeera seeds and curry leaf 5. Sauté on low till onions turn golden 6. Add in curry powders,ginger garlic and mix well 7. Add in tomatoes,salt,sugar,chopped mint and coriander,mix ,cover and cook for 10 mins or till the oil has risen to the surface. 8. Add in tamarind water ,cover and cook for a further 5 mins 9. Turn off heat ,add in boiled rice and mix well 10. Layer with fried fish,blobs of butter and more chopped mint and coriander 11.
