A hearty and healthy Italian-inspired meal featuring lean chicken sausage, fiber-rich vegetables, and whole grain rice, perfect for meal prep. Ingredients: - 4 large bell peppers (any color) - 1 pound Italian chicken sausage (lean, reduced sodium if available) - 1 cup brown rice (uncooked) - 1 cup diced zucchini - 1 cup diced carrots - 1 cup chopped spinach (fresh) - 2 cloves garlic (minced) - 1 teaspoon Italian herbs (oregano, basil, thyme) - 1 tablespoon olive oil - Salt and pepper to taste (use minimal salt) - Optional: grated parmesan cheese (light) for topping Instructions: 1. Cook the brown rice according to package instructions. Set aside. 2. Cut the tops off the bell peppers and remove seeds and membranes. Lightly brush the peppers with 1/2 tablespoon of olive oil and set aside. 3. Heat a large skillet over medium heat. Add the Italian chicken sausage, breaking it apart with a spoon, and cook until browned and cooked through. Remove from skillet and set aside. 4. In the same skillet, add the remaining 1/2 tablespoon olive oil. Sauté minced garlic until fragrant, then add diced zucchini, carrots, and chopped spinach. Cook until vegetables are tender. 5. Return the cooked sausage to the skillet with vegetables. Add Italian herbs, salt, and pepper. Mix well. 6. In a large bowl, combine cooked rice with the sausage and vegetable mixture. 7. Stuff each prepared bell pepper with the rice mixture, pressing down slightly to pack. 8. Place stuffed peppers upright in a baking dish. If desired, sprinkle with a small amount of grated parmesan cheese. 9. Preheat oven to 375°F (190°C). Bake the stuffed peppers uncovered for 25-30 minutes, until peppers are tender. 10. Remove from oven and let cool slightly before serving. #Recipe #cooking #foodtiktok #homemade #EasyRecipes #DinnerIdeas #mealprep Save this for later!
