It's even simpler than that.
- Jesse said "I won't leave this hospital until Gus comes here so we can talk."
- Gus came to the hospital to talk.
- Jesse still wouldn't leave the hospital.
- Gus had to be thinking "what was the point of all of that? Why did I come here?"
- He realizes that no matter what the answer to that is, it's clear that *someone* wants him to be doing exactly what he's doing right now. The only response is to stop doing those things and do something else instead.

This is partially why I think Better Call Saul retroactively makes these characters so much deeper and more genius. BCS establishes just how brilliant and resilient characters like Gus (and Mike) are. Knowing this fact amplifies Walt’s genius because he’s the only person to outsmart all of them.

Gus knew he didn't poison Brock, and he knew Walt is a genius chemist, desperate, and would want to find a way to get Jesse back in his corner. He also knew that Walt would need a way to draw him out somewhere that he wasn't in control of the environment. This is a guy who spent 20 years under the threat of assassination from a drug cartel, so his mind has been constantly turning for decades trying to anticipate every opportunity an assassin might take advantage of. With the added context of BCS we have now, he anticipated Lalo trying to get him at the laundry and prepared ahead of time. So we know this is how Gus thinks
