They are the perfect combination! ✨ ~Brownie Cookies • 160 g unsalted butter • 100 g semi-sweet chocolate • 100 g 60% dark chocolate • 140 g granulated sugar • 80 g brown sugar • 2 large eggs • 1 egg yolk • 1 tsp vanilla extract • 85 g all-purpose flour • 20 g unsweetened cocoa powder • ½ tsp salt ~Vanilla Bean Marshmallow • 18 g unflavored gelatin • 75 g cold water • 250 g granulated sugar • 70 g water • 60 g honey • ¼ tsp salt • 2 tsp vanilla bean paste ~White Chocolate Coating • 250–350 g white chocolate, melted ~Brownie Cookies 1. Melt the butter together with the semi-sweet chocolate and 60% dark chocolate until completely smooth. Let cool slightly. 2. In another bowl, whisk together the eggs, egg yolk, granulated sugar, brown sugar, and vanilla. 3. Slowly incorporate the melted chocolate mixture. 4. Add the flour, cocoa powder, and salt. Mix just until combined. 5. Portion the dough into 30–35 g cookies. 6. Place them on a parchment-lined baking sheet, leaving space between each cookie. 7. Bake at 350°F until the edges are set but the center still looks soft and fudgy. 8. Let the cookies cool completely before adding the marshmallow. ~ Vanilla Bean Marshmallow 1. Place the gelatin in the bowl of a stand mixer and add 75 g cold water. Let it bloom for 5–10 minutes. 2. In a saucepan, add the sugar, 70 g water, honey, and salt. 3. Cook over medium-high heat until it reaches 242–244°F (117–118°C). 4. With the mixer on low speed, slowly pour the hot syrup over the bloomed gelatin. 5. Gradually increase the speed and whip for 8–10 minutes, until white, glossy, very fluffy, and thick. 6. Add the vanilla bean paste and whip for another 20–30 seconds. 7. Immediately transfer the marshmallow to a piping bag. ~ Assembly 1. Once the cookies are completely cool, pipe approximately 15–18 g of marshmallow onto each cookie, creating a dome. 2. Refrigerate for 1–2 hours, until the marshmallow is firm. 3. Melt the white chocolate until completely smooth. 4. Dip each cookie, completely coating the marshmallow. 5.
