@thebeautydoctrine: $3 BEAUTY BREAKFAST 🍳 POV: They tell you eating healthy is expensive, but this entire organic breakfast costs around $3 and takes less than 10 minutes. And from a Functional Beauty perspective, there is a lot happening on this little plate. 🥚 3 organic eggs provide about 19 grams of complete protein. Hair is primarily made of keratin, a protein. Your skin, connective tissue and muscle also require a consistent supply of amino acids for maintenance and repair. Eggs provide all 9 essential amino acids, including sulfur-containing amino acids involved in keratin structure. They also give you choline, B12, selenium, biotin and fat-soluble nutrients. 🧅 Then there’s the humble red onion. Onions contain organosulfur compounds and quercetin, a flavonoid with antioxidant and anti-inflammatory activity. Sulfur is especially interesting when we talk about hair because keratin contains large amounts of the sulfur-containing amino acid cysteine. Disulfide bonds between cysteine residues help give hair its strength and structure. You may have also heard about onion juice for hair growth. There actually IS a small human study behind this. Researchers studied topical raw onion juice in people with patchy alopecia areata and found significantly greater hair regrowth compared with tap water. That was topical onion juice in a specific type of hair loss, so it does not mean eating onions will regrow your hair. But onions are still a fantastic whole food to include in a nutrient-diverse diet. 🩸 Now let’s talk blood sugar. I would much rather build breakfast around protein and whole plants than start my morning with bread, cereal, pastries or other refined carbohydrates. Protein slows digestion, increases satiety and generally produces a much smaller glucose excursion than a carbohydrate-heavy breakfast. Adding plant foods also gives you fiber and phytonutrients. Why does that belong in a beauty conversation? Because chronically elevated glucose can increase glycation, where sugars bind to proteins. Collagen and elastin are long-lived proteins and can accumulate advanced glycation end products over time, contributing to increased stiffness and reduced elasticity. Healthy aging isn’t just about what you put ON your skin. It’s also about maintaining muscle, supporting metabolic health, getting adequate protein, supplying micronutrients and creating an internal environment that allows your body to continually repair itself. And sometimes that starts with a $3 breakfast. 🍳 MY $3 BEAUTY BREAKFAST Ingredients: • 3 organic eggs • 1 small organic red onion • Salt • Black pepper • Small amount of your preferred cooking fat. I use olive oil. Directions: Thinly slice the red onion and sauté over medium-low heat until soft and translucent. Add 3 eggs directly over the onions. Season with salt and freshly ground black pepper. Cover and cook until the whites are set and the yolks reach your preferred consistency. That’s it. Simple food. Complete protein. Plant compounds.
