@ellysplate: Cooking for non vegans episode 8, mushroom adobo for my hair wizard @jomelynferrashair (& for her parents 😭) Serves 3-4 500g meat alternative (I used @fablefoodco) 3-4 tbsp oil 12 cloves garlic 1 red onion, roughly cubed 1 tsp whole peppercorns 3 dried bay leaves 2-3 tbsp soy sauce (I sub tamari to keep GF) 2-3 tbsp apple cider vinegar 200ml vegetable broth 1/2-1 tbsp sugar (adjust to taste) Heat a large non-stick pan. Add a generous amount of oil. Fry off the meat alternative until slightly crispy and then set aside. If a lot of oil remains in the pan, remove some using kitchen paper. Add in the onions, garlic, and peppercorns, let garlic and onions to cook until softened. Add the bay leaves, soy sauce, vinegar, and vegetable broth. Mix well and leave to simmer over medium heat until it comes to a boil. Add in sugar and taste the sauce. Adjust to your taste (add more soy sauce/tamari for saltiness, vinegar for acidity, or sugar for sweetness). Add your protein of choice back in and leave to simmer for 10-12 minutes or until the sauce has reduced. Serve alongside some salad and fried garlic rice.
