You are not understanding the word ripe. Ripe means ready to eat. Mature fruit is what you’re talking about.

When they turn yellow they aren’t edible “ripe” they are just fully mature and have completely the plants cycle to reproduce and produce the next generation of seeds. That’s why the seeds get larger the larger you let the fruit grow. If you leave cucumbers on the plant to get yellow to produce seed at full maturity you plant will die off because it has completely it’s life cycle to produce new viable seeds and reproduce the next generation of plants. That’s also why they get extremely bitter and inedible at the yellow stage because it’s a defense mechanism to keep things from eating the fruit before it can grow a new plant from the mature seeds.

When I let one cucumber go to complete ripeness, the plant dies. At least, mine do. Found this out the HARD way.
