This Crispy Pork Panang Curry Brothy Rice was TOO good! I paired @Success Rice Boil-in-Bag Sticky Rice with a creamy Panang curry broth, crispy pork and a few of my favorite toppings. So much flavor and such an easy dinner to make. #Ad #SuccessRicePartner Ingredients: •1 lb ground pork (or ground chicken or beef) •½ –1 tbsp neutral oil, as needed •½ Fresno chile, finely diced, seeds and membrane removed •2 tbsp thinly sliced white/light-green parts of green onion •4 garlic cloves, finely minced •1 tsp fresh ginger, finely grated •1 tbsp + 2 tsp soy sauce •2 tsp fish sauce •2 tsp light brown sugar •½ tsp white pepper Panang Curry Broth •1½ tsp neutral oil •5 tbsp Panang curry paste •1½ (13.5-oz) cans full-fat unsweetened coconut milk •¾ cup chicken broth •1 tbsp fish sauce •1 tbsp light brown sugar •½ tsp fresh lime juice, optional Seared Baby Bok Choy •3–4 baby bok choy, halved lengthwise •Neutral oil, as needed •⅛ tsp kosher salt For Serving •2 bags Success Boil-in-Bag Sticky Rice, prepared according to package directions •Crispy fried shallots •Thai basil, thinly sliced •Lime wedges Directions 1. Heat ½ tablespoon neutral oil in a large, deep skillet or saucier over medium-high heat. Add the ground pork and press it into an even layer. Cook undisturbed for 3–4 minutes, allowing the bottom to develop a deep brown crust. 2.Break up the pork and continue cooking for another 2–3 minutes. If the pan looks dry, add additional neutral oil as needed. 3.Add the diced Fresno chile and green onion and cook for about 30 seconds. Add the garlic and ginger and cook for another 30 seconds, stirring frequently. 4. Add the soy sauce, fish sauce, brown sugar, and white pepper. Cook for another 1–2 minutes, stirring, until the liquid has reduced and the pork is browned and caramelized. Remove the pork from the pan and set aside. 5. Using the same skillet or saucier, heat 1½ teaspoons neutral oil over medium heat. Add the Panang curry paste and cook, stirring, for about 1 minute. 6.Add ¼ cup coconut milk and stir until combined with the curry paste. Cook for 1–2 minutes. 7. Pour in the remaining coconut milk, followed by the chicken broth, fish sauce, and brown sugar. Stir to combine and bring to a gentle simmer. Cook for about 5 minutes, stirring occasionally. Taste and adjust as needed. For a thinner broth, add additional chicken broth ¼ cup at a time. If desired, stir in ½ teaspoon fresh lime juice at the end. 8. Heat a thin layer of neutral oil in a separate skillet over medium-high heat. Place the bok choy cut-side down and sear undisturbed for 2–3 minutes, or until nicely browned. Season lightly with kosher salt, flip, and cook for about 1 additional minute, until just tender and still bright green. 9. Prepare the Success Boil-in-Bag Sticky Rice according to package directions. 10. Divide the sticky rice among serving bowls. Spoon the crispy pork over the rice and arrange the seared bok choy alongside it. Slowly ladle the Panang curry broth around the rice. 11. Finish with crispy fried shallots, thinly sliced Thai basil, and additional Fresno chile. Serve with lime wedges on the side.
