@lydmama: Sopes (With what we have at home) 1lb Ground beef Cook the beef then add in 1-2 carrots, diced 1 Peeled potato, into big matchsticks Half an onion, diced Garlic powder Paprika Onion powder Salt and pepper In a blender add: 1 tomato Half a jalapeño 1/2tbsp chicken bouillon 1/2c water Blend until smooth then add it to the beef, cover and simmer for 10min on low. Sopes: In a bowl add 2cups corn flour (Maseca) I use Aldi brand usually. Add a little salt and then 2cups of hot water. Mix together well until you get a nice dough. Make balls, shape and shallow fry on each side until crispy. 2-3min on each side. Add the meat on the sopes and top with desired toppings! These were SOOO good, excited to try them again with toppings 🤣🤣 #sopes #beefrecipes #groundbeef #mexicanfood #Recipe
The cool thing about cooking in general, recipes were cultivated by people simply trying to feed their families/communities. No one was thinking about complaining that someone a few hundred years later might be missing an ingredient. They cooked with what they had available to take care of those they loved and taught their children to do the same. You are fed, your house is fed, and I bet it's bomb. 💜

If you have it on hand for next time try making some refried beans and putting it underneath the meat to add a little more fixings. I know you were limited with this one and they look suuuuper good. ❤️❤️

I truly don’t think you need to change your method. But typically you first cook the sopes on a dry pan, just like an extra thick tortilla. Then once cooked and still hot, you pinch the sides. Then you fry. In some states they call them ‘pellizcadas’ which means ‘pinched ones’. Always found that funny. These look amazing though ❤️
