I think you meant to say Italian Americans. Pesto just means "to crush" and what they think of pesto is actually very specifically "basil pesto". Any actual Italian knows this.

Only pesto alla genovese is made with basil only. We make all kinds of other pesto here in Italy. My favorite is my Nonna’s Sicilian pesto with sun dried tomatoes, almonds, capers, black olives, garlic and olive oil.

I'm an Italian Italian and yes we make all kinds of pesto. However there is a very noticeable difference in texture, taste, and aroma when you use the traditional mortar and pestle.

There are literally dozens of pestos in Italy… rucola, zucchini, pistacchi, melanzane, mandorle, barbabietole, broccoli, pomodori secchi, mamma mia. I don’t understand the hate. Source: I live in Italy. Download the Italian cooking app Giallo Zafferano (change your country to Italy in setting to do this) and get authentic recipes. Yes, you’ll have to translate them

You’re talking to American (include Canadian) Italians. I’ve seen them make pesto from black Kale. Pesto refers to pounding as in a pestle and mortar.
