Its classic appearance is reminiscent of traditional Japanese chuka soba, made even more special by the unique atmosphere of a street-side ramen stall. The light soy sauce-based broth is infused with the savory umami of dried sardines, creating a clean yet satisfying flavor. The refreshing aroma and crisp texture of the green onions add the perfect accent, making it an easy bowl to enjoy even late at night.
