Saplarını ve çöplerini tek tek ayıkladım. 2️⃣ En önemli püf nokta Üzümleri asla ezmiyoruz! Blender kullanmıyoruz. Çünkü çekirdek acılığı şıraya geçerse pekmez tadı bozulur. 3️⃣ Şıra elde etme Üzümleri tencereye alıp suyunu salana kadar pişirdim. Yumuşayıp şıra çıkınca küçük bir kısmını pestil için ayırdım. 4️⃣ Pestil yapımı Ayırdığım şıraya 2 yemek kalıpı un ekledim , tepsiye incecik serdim. Fırında fanlı 70 derece/ Güneşte/uygun ortamda kurutarak pestil yaptım. 5️⃣ Pekmez kaynatma Kalan şırayı önce harlı ateşte kaynattım, sonra kısık ateşte yaklaşık 2,5 saat ağır ağır kıvam aldırdım. 6️⃣ Tencere seçimi önemli Az bile olsa geniş tencere kullanın. Yüzey geniş olunca su daha hızlı buharlaşır, kıvam daha iyi olur. 7️⃣ Sabır kısmı 😅 Gece 1’e kadar başında bekledim! Kıvamı alınca ocaktan alıp dinlenmeye bıraktım. 8️⃣ Sirke yapımı (sıfır atık) Posaları asla atmadım. Üzerine su ekleyip, hava alan temiz bir bezle kapattım. Karanlık bir yerde fermantasyona bıraktım. 9️⃣ Sonuç ✨ Ertesi gün: ev yapımı mis gibi üzüm pekmezi, pestil ve sirke hazırdı! 🔟 Bonus Haftaya köyde odun ateşinde denemeye devam! 🍇🔥 #pekmez #mutfaksırları
