Creamy Parmesan chicken & ditalini 🤍 An easy, cozy crockpot dinner! Ingredients: • 2 boneless chicken breasts, thawed • 2 cups mirepoix (diced onion, carrots & celery) • 3 cups chicken broth • 1 tsp garlic powder • 1 tsp Italian seasoning • Salt to taste • ¾ cup dry ditalini • ½ cup heavy cream • ½–¾ cup grated Parmesan • Slurry: 1 tbsp cornstarch mixed with 1 tbsp cold water Add chicken, mirepoix, broth and seasonings to the crockpot. Cover and cook on high for about 3–4 hours or low for 5–6 hours, until the chicken reaches 165°F and the veggies are tender. Shred the chicken directly in the pot, then stir in the heavy cream and cornstarch slurry together. Cover and cook on high for 10–15 minutes, or until thickened. Meanwhile, cook the ditalini separately according to the package and drain.
