I was taught to make mayo very differently! It’s an emulsion. Therefore, you need raw eggs, some Dijon mustard, lemon juice, white wine vinegar and a plain-tasting oil; not olive oil. The confection you have made is more like salad cream…

We’d call that salad cream in the UK. Mayo is made with raw eggs. Does look delicious.
