For as long as I can remember, Alex has called this her “summer pasta.” Whether she had a long day I wanted to celebrate this was The. She would ask me to make. Today was her last day home before heading back to college, so I had to send her off with a little taste of summer in Seattle. Miss you, girl. @theweilside Alex’s Summer Pasta Ingredients * 3 tablespoons extra-virgin olive oil * 10 large garlic cloves, smashed * 6 cups mixed-color cherry tomatoes, halved * Kosher salt, to taste * Freshly ground black pepper, to taste * 1 large bunch fresh basil * 1 pound angel hair pasta * Freshly grated Parmesan, to taste * 1–2 balls burrata * Reserved pasta water, as needed * Extra-virgin olive oil, for finishing Directions 1. Start the sauce. Heat the olive oil in a large stainless-steel sauté pan over medium-high heat. Add the smashed garlic and cook for about 1 minute, until fragrant. 2. Add the tomatoes. Add the halved cherry tomatoes and season generously with salt. Toss to coat, cover, and cook for 3–4 minutes. Uncover, stir, cover again, and repeat a couple of times until the tomatoes are soft, juicy, and beginning to collapse. 3. Smash and blend. Use the back of a spoon or spatula to smash the softened tomatoes and release all their juices. Once the tomatoes have broken down, use an immersion blender to blend the sauce until relatively smooth. A few tomato skins are completely fine. 4. Steep the basil. Turn off the heat. Add the entire bunch of fresh basil to the hot tomato sauce, pressing it down into the sauce. Let the basil steep for about 5 minutes, then remove it. Taste and adjust the seasoning with salt and freshly ground black pepper. 5. Cook the pasta. Meanwhile, cook the angel hair in well-salted water until just al dente. Before draining, reserve some of the pasta water. 6. Toss until glossy. Add the drained angel hair directly to the tomato sauce. Toss well, adding reserved pasta water a little at a time until the sauce becomes silky and coats every strand of pasta. Add freshly grated Parmesan and toss again. 7. Burrata goes on top. Transfer the pasta to a serving platter or large shallow bowl. Place the burrata directly on top of the hot pasta. Finish with fresh basil, freshly cracked black pepper, more Parmesan, and a drizzle of good olive oil. Break open the burrata just before serving and let the creamy center run into the tomato pasta. #tomatosauce #farmersmarket #daughters #EasyRecipe #pastasauce
