I'm glad I read your caption, because I'm sitting here thinking the whole time, these look like gnocchi. so, you said the texture is definitely different, but what about the flavor? do they taste like gnocchi but with a different texture, or does the potato starch completely changed the flavor as well?

respectfully, why go to all that trouble if you really just like the flavor of the sauce and you can put that on like pasta or something. it seems like a lot of trouble for something that doesn't have any flavor

layer salt, cook in chicken/veg stock, saute them before adding the sauce all of that would add SO much flavour

Instead of hand rolling individual balls, you could just roll them out into the noodles and then cut them into small pieces like little pillows.
