@veymons.archive: When asked why fine dining portions are so small, most blame high ingredient costs. But a steakhouse buys expensive ingredients and hands you half a cow. As Major Food Group’s Jeff Zalaznick noted, a restaurant tells a story no differently than a movie or a play. The food isn't the product; it's the script. To guide an audience through 10 or 12 distinct narrative acts without them collapsing before the climax, the portion size must shrink. Are you going out to eat, or are you buying a seat to a director's cut? #finedining #sociology #culturalanalysis #gastronomy #consumerbehavior
I remember reading something about the French staging in Japan and learning japanese kaiseki and adopting it into their cooking and well as you know the french had a big impact on modern cuisine

i actually love smaller portions. i never feel overly full. this kind of restaurant give an amazing experience, as the atmosphere is calming, the lighting is great and the tables are seperated unlike some restaurants where tables are cramped together so you really get to be in your own bubble and relax.

The first few bites of a dish provide the most excitement and pleasure, after that it may become boring. Still plenty of food.

You can't finish 10-20 full sized portions. I've never been hungry after doing a full tasting menu...

Except no one goes into the movie expecting 1/8th of a movie instead of a whole movie. A restaurant is meant to give me what I order, and for many of us we don’t eat everything and to each their preferences what are we going to do with the unwanted dishes? Let alone people with allergies? To me that’s just a false analogy. To many that’s art and maybe their preference

The response is simply. Fine dining is not about eating a meal - it is about the sensory experience.

Ppl miss that when you see those pics of tiny courses, that’s one out of 10-20. Like no one is walking out hungry. Once I had 48 courses in one day bc I had multiple tasting menus, and despite the small portions, I was stuffed by the end of the day.
