I went to the farmers market on Saturday and came home with a big bag of carrots, and the first thing that came to mind was… carrot cake. 🥕🤍 So I made a healthier version with no refined sugar, using maple syrup for sweetness and a mix of oat flour and all-purpose flour. And the ricotta topping… SO good! I mixed ricotta with a little honey and cinnamon, and it turned into the creamiest, lightly sweet topping. It almost reminds me of a vanilla cream. 😍 A Healthier Version of Carrot Cake 🥕 Ingredients Wet ingredients 	• 2 large eggs 	• ⅓ cup (80 ml) maple syrup 	• ⅓ cup (80 ml) avocado oil or another neutral oil 	• ⅓ cup (80 g)  plain Greek yogurt 	• 1½ cups (about 150–160 g) finely grated carrots — about 3–4 medium carrots Dry ingredients 	• 1 cup (125 g) all-purpose flour 	• ¾ cup (75 g) oat flour 	• 1½ tsp baking powder 	• 1 tsp ground cinnamon 	• ⅓ cup (35–40 g) walnuts, finely chopped For the Topping 	• 3/4 cup (170g)  whole-milk ricotta 	• 2 or even 3 tbsp honey or maple syrup (depending on how sweet you want it) 	• A little ground cinnamon 	• Finely chopped walnuts for topping, optional Instructions 	1. Preheat the oven to 350°F (175°C). Lightly grease an 8-inch round cake pan and line the bottom with parchment paper. 	2. Peel and finely grate the carrots. Do not squeeze out the moisture. 	3. In a large bowl, whisk together the eggs, maple syrup, avocado oil, and Greek yogurt until well combined. 	4. Add the grated carrots and mix gently. 	5. In a separate bowl, whisk together the all-purpose flour, oat flour, baking powder, baking soda, and cinnamon. 	6. Add the dry ingredients to the wet ingredients and gently mix until just combined. Do not overmix. 	7. Fold in the finely chopped walnuts. The batter should be thick and moist. Transfer the batter to the prepared pan and smooth the top. 	8. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean or with just a few moist crumbs. 	9. Let the cake cool in the pan for about 10–15 minutes, then transfer it to a cooling rack and let it cool completely. 	10. For the topping, mix the ricotta with honey or maple syrup and a little cinnamon until creamy. 	11.
