So delicious! 😍 What you need:  	• 4 small sweet potatoes or 2 large sweet potatoes 	• A little olive or avocado oil, for lightly coating the sweet potatoes  	• 1 lb (450 g) ground beef 	• ½ teaspoon garlic powder 	• ½ teaspoon sweet paprika 	• ¼–½ teaspoon salt, or to taste 	• 1 tablespoon (16 g) tomato paste 	• ¼ cup (60 ml) low-sodium chicken broth 	•    cottage cheese 	• Finely chopped fresh parsley, optional 	 Instructions:  	Wash and dry the sweet potatoes thoroughly, then cut them in half lengthwise. 	Lightly coat the cut sides with oil then sprinkle with a little salt. Place them cut-side down on a parchment-lined baking sheet. 	Bake at 400°F / 200°C for 30–40 minutes. They are ready when a fork slides easily into the thickest part.
