@yeli.heidecker: KISS DINNER | Creamy Tomato & Zucchini Pasta Bake What you need: * 1 zucchini, chopped * Cherry or grape tomatoes (or whatever tomatoes you have), chopped * 1 block (8 oz) cream cheese * A drizzle of olive oil * Italian seasoning * Salt + pepper * 8–12 oz pasta, cooked * Shredded mozzarella cheese How to make it: Preheat your oven to 350°F. Add the chopped zucchini and tomatoes to a casserole/baking dish. Place the block of cream cheese in the middle, drizzle everything with olive oil, and season with Italian seasoning, salt, and pepper. Bake for about 20–25 minutes, or until the veggies are tender and the cream cheese is nice and soft. While that’s baking, cook your pasta according to the package directions. Save a little pasta water before draining in case you want to loosen up the sauce. Once the veggies are done, mash/stir the tomatoes, zucchini, and cream cheese together right in the baking dish until you have a creamy sauce. Add your cooked pasta and toss everything together.
