✨🍑Peaches & Cream Summer Cheesecake🍑✨ Nothing says summer quite like fresh peaches and creamy cheesecake✨ This vegan Peaches & Cream Cheesecake has a buttery cookie crust, silky cashew cheesecake filling, and a warm cinnamon peach topping🥰 I used @zulkasugar 's organic, non-GMO, bone-char free sugar to give the creamy cheesecake the perfect light sweetness & Zulka's brown sugar to soften and sweeten the juicy peaches🤍 ✨Crust 225 g vegan plain cookies 75 g vegan butter, melted ✨Cheesecake Filling 1 cup (220 g) coconut cream 8 oz (225 g) vegan cream cheese 1 heaping cup (175 g) soaked cashews ½ cup (100 g) Zulka Pure Cane Sugar 2 tbsp cornstarch Juice and zest of ½ lemon 2 tsp vanilla bean paste or vanilla extract Pinch of salt ✨Peach Topping 4 medium ripe peaches, chopped ¼ cup chopped walnuts ¼ cup Zulka Brown Pure Cane Sugar 1 tbsp vegan butter ½ tbsp cinnamon Juice of ½ lemon Pinch of nutmeg Dash of vanilla Pinch of salt 1 ½ tbsp cornstarch ✨Directions Add the cookies to a food processor and pulse until finely crushed. Add the melted butter and pulse until well combined. Line a 9-inch springform pan with parchment paper and lightly grease it. Press the crust mixture firmly into the bottom and up the sides of the pan. Set aside. In a clean food processor, combine all filling ingredients. Blend until completely smooth. Pour the filling over the prepared crust. Wrap the bottom of the springform pan tightly with foil to prevent water from leaking into the cheesecake. Place the cheesecake inside a larger baking tray. Pour about 1 cup of water into the baking tray to create a water bath. Bake at 350°F (175°C) for 50–60 minutes. Try not to open the oven door while baking. Remove from the oven and let the cheesecake cool completely at room temperature. Refrigerate for at least 4–5 hours, or until fully set. Add the chopped peaches and walnuts to a large pan over medium heat. Stir in the Zulka brown sugar, butter, cinnamon, lemon juice, vanilla, nutmeg, and salt. Cook for 7–10 minutes, until the peaches have softened significantly. Add the cornstarch and whisk well to remove any lumps. Cook for another 2–3 minutes, then remove from the heat. Spoon the warm peach topping over the fully chilled cheesecake. Slice and enjoy! ✨Notes: For the best color and freshness, make the peach topping just before serving. Cooked peaches can darken after being peeled, chopped, and cooked, but they'll still taste delicious.
