The first is "smalec" (lard i think will be the rights word for this in english), made by rendering pork fat with onion and often adding meat and bacon. It tastes best with a pickled cucumber on the side. The second is "twarożek" - a fresh cow's milk cheese mixed with sour cream and chives.

The first one is smalec, lard with meat chunks. The best when you are going to drink. That is one of the secrets why polish people can drink so much and stand still. The second is just white cheese with spices.

Pork lard is not "something Soviet." It has been known across Europe for centuries as a readily available animal fat; the only places where it is likely unknown are those where pork is not consumed. In Poland, diced bacon is added to the rendered fat, followed by finely chopped onion and seasonings—such as salt and herbs—according to personal taste. I have also heard that some people add a little grated apple, though I have never tried it myself. Traditionally, we eat it spread on bread and served with a lightly salted pickle. Delicious!

Just ask the service to explain what you are served. it was pork fat , you need salt and sour cucumber for that, the second is twarożek which is white cheese with cream and onions or radish, or just plain. put salt on both always.
