@huttongirlshomestead: Roasted spaghetti sauce: Roma, San Marzano, & cherry tomatoes 1 garlic head 1 onion olive oil fresh basil balsamic vinegar salt & pepper Add tomatoes, garlic, onion, oil, and vinegar to a sheet Pan and roast on 400 for 30 minutes. Add to a blender and blend until your desired consistency. At this point its ready to eat! or you may can it to make it shelf stable- waterbath can for 30 minutes. I believe garlic can cause bacteria if you're only using a water bath somebody please correct me if I'm wrong but garlic is a No-No if you only would have baths

Oil traps bacteria like Clostridium botulinum and prevents heat from penetrating evenly, I don't think this is shelf stable with the oil if Water bath canning no hate it looks great

Is the 1/2 hour water bath safe ? I’m genuinely asking because I’ve always been told no it’s 3 hrs w.b. Or to pressure can . I can say pc gives it a burnt taste I don’t like .
