@healthysweetsandeats: Mixed Berry Breakfast Bars 🫐🍌 Three ripe bananas, peanut butter, oats and mixed berries come together to make the easiest healthy breakfast or snack! These bars are naturally sweetened with fruit, packed with wholesome ingredients, and each bar has about 5g of natural fiber to help keep you full. They’re perfect for meal prep and taste just as delicious straight from the fridge as they do fresh from the oven. Ingredients: 3 ripe medium bananas, mashed 2 large eggs 1/2 cup natural peanut butter 2 cups old-fashioned rolled oats 1 cup fresh or frozen blueberries 1 cup fresh or frozen raspberries 3/4 teaspoon baking powder 1 teaspoon vanilla extract 1/2 teaspoon ground cinnamon Pinch of salt Directions: 1️⃣ Preheat your oven to 350°F. Line a 9x9-inch baking pan with parchment paper and lightly spray with cooking spray. 2️⃣ In a large bowl, mash the bananas until mostly smooth. Whisk in the eggs, peanut butter, vanilla, cinnamon, baking powder and salt until combined. Fold in the oats, then gently stir in the frozen blueberries and raspberries. 3️⃣ Spread the mixture evenly into the prepared pan and bake for 35–42 minutes, or until the center is set and the edges are lightly golden. Let the bars cool completely before slicing into 9 squares for the cleanest cuts.
