@a.tay8: Easy Moist Zucchini Bread Makes: 1 large loaf Ingredients * 1½ cups grated zucchini (about 1 medium zucchini) * 2 eggs * ½ cup melted butter * ¾ cup brown sugar * ¼ cup maple syrup or honey * 1 tsp vanilla * 1½ cups all-purpose flour * 1 tsp cinnamon * ½ tsp baking soda * ½ tsp baking powder * ½ tsp salt * ½ cup chocolate chips or chopped walnuts (optional) Directions 1. Preheat oven to 350°F. Grease a 9x5 loaf pan. 2. Grate your zucchini with the skin and seeds. If it’s a really large zucchini with tough seeds, scoop out the center first. 3. In a bowl, whisk together the eggs, melted butter, brown sugar, maple syrup/honey, and vanilla. 4. Stir in the grated zucchini. 5. In another bowl, mix the flour, cinnamon, baking soda, baking powder, and salt. 6. Add the dry ingredients to the wet ingredients and stir just until combined. Don’t overmix. 7. Fold in chocolate chips or walnuts if you want. 8. Pour into your loaf pan and bake for 50–60 minutes, until a toothpick comes out mostly clean. 9. Let it cool in the pan for about 10–15 minutes, then transfer to a cooling rack.
