Wrap tightly in foil and bake at 275°F for 2 to 2½ hours. Carefully drain the liquid, brush generously with BBQ sauce, and return to the oven for 15–20 minutes until sticky and caramelized. Optional: broil for a few minutes at the end for extra char.
