Homemade lasagna noodles, the traditional Italian way, combined with a kitchen hack that saves time on the day of the feast.  This method lets you cook the lasagna sheets the day before, saving time on the big day!  For one large lasagna:  * 600 grams 00 flour (maybe a little more or a little less)  * 6 large eggs * Pinch of salt (optional) Extra flour for dusting.  Make a mound with the flour on a work surface and create a well in the centre. Crack the eggs into the well. Whisk the eggs and slowly gradually incorporate the flour from the sides of the well, mixing it into the eggs using a fork. Continue this process without breaking the well until you form a shaggy dough. Finish kneading with your hands while slowly incorporating the flour until you have a smooth ball of dough. You may not require all the flour. Approximately 10 mins of kneading. Wrap the dough in plastic wrap and let it rest on the counter for 1 hour. Cut the dough into quarter pieces and press the first piece of dough with your hands, then pass the dough through the largest dial of the pasta machine. Dust with flour if necessary and make a letter fold with the dough, then pass it through the largest dial of the pasta machine again. Continue passing the dough through the pasta machine up to 5 or 6 on the machine, or more depending on the machine. Dusting with flour in between when needed. The dough should be translucent enough to see your hand through it. Trim the ends of the pasta sheets and cut them into large rectangles of equal size. Let them rest on the counter to dry for approximately 30 minutes. Cook the noodles in salted boiling water for about 30 seconds, then place them in an ice water bath and lay them on a tablecloth to dry. Pat them down with a tea towel to remove excess water. Layer the lasagna. For a time-saving hack, place the lasagna sheets between parchment paper or Saran Wrap and store them in an airtight container in the refrigerator overnight.
