Melt the chocolate melts in a double boiler or microwave until smooth, then transfer to a piping bag. 2. Pipe the melted chocolate into silicone balloon animal molds, making sure each cavity is completely filled. Refrigerate for about 1 hour, or until firm, then transfer the pieces to the freezer to chill further. 3. Carefully remove the chocolate pieces from the molds. Melt about ¼ cup isomalt until completely liquid. 4. Working with one section at a time, carefully apply a small amount of melted isomalt to the connection points, then quickly press the chocolate pieces together. Hold in place until the isomalt sets. 5. Return the chocolate to the freezer between each addition to keep the pieces cold and prevent them from melting as you continue assembling the balloon animal. 6. Repeat until all of the pieces are securely attached, then chill one final time until the entire structure is firm. 7. Serve and enjoy this colorful, completely edible chocolate balloon animal! 🎈🍫
