The cutest lemons macarons to ever exist 🍋 Recipe by Simply Homecooked  Macarons: 4 egg whites room temperature Pinch salt 1/2 tsp cream of tartar 1/2 tsp vanilla extract 1/2 tsp lemon extract 1-2 drops yellow gel food coloring 1/3 cup granulated sugar 2 1/2 cups Powdered sugar 1 1/2 cups blanched almond flour Lemon Buttercream: 1/2 cup unsalted butter softened 2 ounces cream cheese softened 2 cups powdered sugar 2 teaspoon milk 1 teaspoon vanilla extract Zest of 2 lemons 3 tablespoons lemon curd Instructions - Line 2 baking sheets with parchment. Sift almond flour and powdered sugar together; set aside. - Beat egg whites on high until foamy. Add salt, cream of tartar, vanilla, and lemon extract. Gradually add granulated sugar and food coloring. Beat 4–5 minutes, until stiff peaks form. - Fold the dry ingredients into the meringue in 3 additions. Fold just until the batter flows smoothly and forms a figure 8 when drizzled from the spatula. Don’t overmix. - Transfer batter to a piping bag fitted with a round tip. Pipe ~1-inch rounds onto the sheets, leaving 1–2 inches between them. Bake one tray at a time for 16–18 minutes.
