Roasted Veggies 2 large tomatoes 1 small onion 3 heads garlic 2 tbsp olive oil (≈30ml) 1 tsp salt 1 tsp black pepper 1 tsp dried thyme 1 tsp dried basil Roast at 400°F (200°C) for 45 minutes. Tomato Soup 1 cup chicken broth (≈240ml) 1 tbsp butter (≈14g) 2 tbsp tomato paste (≈33g) 1 tsp salt to taste 1 tsp black pepper 1 tsp chili flakes ½ tsp nutmeg Pinch of sugar ¼ cup heavy cream (≈60ml) Handful Parmesan (≈½ cup / 50g) Transfer the roasted tomatoes and onion to a blender.
