Beef Roast Pot Ingredients 3 to 4 pounds beef roast 2 tablespoons olive oil 1 onion, chopped 3 cloves garlic, minced 4 carrots, chopped 4 potatoes, chopped 2 cups beef broth 1 tablespoon Worcestershire sauce Salt and pepper to taste Fresh thyme and rosemary (optional) Directions 1. Preheat your oven to 350°F (175°C) so it’s ready for that beautiful roast. 2. In a large skillet, heat the olive oil over medium heat. 3. While the oil warms up, season your beef roast generously with salt and pepper. Sear the roast on all sides in the hot skillet until it’s nice and browned. 4. Move the seared roast into a roasting pan. 5. In the same skillet, add the chopped onion and minced garlic. Sauté them for a few minutes until they turn soft and fragrant, then spoon them right over the roast. 6. Nestle the carrots and potatoes around the meat in the roasting pan to soak up all those delicious flavors. 7. Pour the beef broth and Worcestershire sauce over the whole pan, making sure everything gets a little taste. 8. If you like, tuck in some fresh thyme and rosemary for an extra cozy aroma. 9. Cover the pan with foil and roast in the oven for about 3 hours, until the beef is wonderfully tender. 10. Let the roast rest for 10 minutes before slicing it up.
