java is divided into 3 regions west, central, and east. Each have different characteristics in terms of food. West is on savory and salty side, central is definitely more on the sweet side (especially at jogja and solo), and for east is more on bold, savory, and spicy side. And for bali is heavily spiced and aromatic

I’m not vegan but my favorite Indonesian dishes are vegan (chayote curry (lodeh), corn fritters, tofu curry, eggplant with sambal) basically all u had in this vid, if you have the chance please try smashed cassava leaves (daun ubi tumbuk) 🩷
