@flora.grim: Served warm with Greek yogurt on the side… so simple and SO good! 🍎🤍 This recipe makes about 4-5 small fritters Ingredients: • 1 medium apple, preferably Honeycrisp, Pink Lady, Fuji, or Gala • 1 large egg • 2 tbsp (30 ml) milk of choice • 5 tbsp (40 g) all-purpose flour • ½ tsp baking powder (2g) • ¼ tsp ground cinnamon (0.5g) • A small amount of oil or butter, for cooking Instructions: 1. Peel and shred the apple using the large holes of a box grater, then squeeze out as much excess juice as possible. 2. Add the shredded apple to a bowl. 3. Add the egg and milk and mix until combined. 4. Add the flour, baking powder, and cinnamon. Stir just until everything is combined. Do not overmix. 5. The batter should be thick and scoopable, holding its shape on a spoon. If it seems too loose, add 1 additional tablespoon of flour. 6. Heat a skillet over low-medium heat and lightly grease it with a small amount of neutral oil or butter. 7. Scoop about 1 generous tablespoon of batter into the skillet for each fritter. Gently flatten each one just slightly with the back of a spoon. Keep the fritters small and fairly thick, but not so thick that the centers take too long to cook. 8. Cook for about 3-3.5 minutes on the first side, until lightly golden and firm enough to flip. 9.
